Pav Bhaji

Golgappe, also known as Pani Puri or Puchka, is a popular Indian street food snack consisting of small, round, crispy puris filled with spicy and tangy flavored water, mashed potatoes, and tamarind chutney.

Golgappe Recipe

  • 1 cup semolina (sooji)
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/2 cup mashed boiled potatoes
  • 1/2 cup boiled chickpeas
  • 1/4 cup chopped onions
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped coriander leaves
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon chaat masala
  • 1/2 teaspoon red chili powder
  • Tamarind chutney and mint-coriander chutney for filling
  • Water for making the dough
  • Oil for deep frying

Instructions:

  1. Mix semolina, all-purpose flour, baking soda, and a pinch of salt in a bowl.
  2. Add water gradually to make a smooth dough. Cover and let it rest for 30 minutes.
  3. In a separate bowl, mix mashed potatoes, boiled chickpeas, chopped onions, tomatoes, coriander leaves, cumin powder, chaat masala, and red chili powder.
  4. Divide the dough into small balls. Roll each ball into a thin disc.
  5. Cut small circles using a round cutter. Deep fry them until golden brown and puffed.
  6. Make a small hole in the center of each fried disc. Fill it with the prepared potato mixture.
  7. Top with tamarind chutney and mint-coriander chutney. Serve immediately.
